What is the difference between Active Dry and Instant Yeast?
There are 2 types of yeast: Fast Rising or Instant and Active Dry. Active Dry Yeast is made of larger granules that require soaking in water before being added to the bread mixture. Active Dry Yeast is coated with inactive yeast cells that protect the "active" yeast cells. Instant, or fast rising yeast, is made of smaller granules that do not need to be soaked in water prior to being added to the other ingredients. It can be added directly to the flour mixture which activates the yeast cells. Perfect Rise works in all recipes including those calling for Active Dry Yeast.

How do I tell if the yeast is active?
You can test your yeast with 1 cup of warm tap water, 1 Tbs. of yeast, and 1 tsp. of sugar. Mix together and if the mixture bubbles or grows, then it is active. If it does nothing, or if there is only a couple of bubbles, then it is dead and should be thrown away.

How do I store SAF® Perfect Rise Yeast?
You can store your SAF® Perfect Rise Yeast in the freezer or in the refrigerator. Storing it in the freezer will keep it fresher than storing it at room temperature.

Is it necessary to warm the yeast up after taking it out of the freezer?
No, by the time you get out all of the other ingredients, your yeast is usually warm enough.
