How do I determine if I have kneaded my dough enough and the dough has the right consistency?
TRADITIONAL METHOD:
To determine if yeast dough is kneaded enough, break off a small walnut-sized ball of dough. Stretch the dough, much like stretching a balloon or a piece of bubble gum. If the dough is kneaded enough, it will not tear easily and a translucent membrane will be visible. (This is known as a "gluten window".) If the gluten window is translucent, your dough has been kneaded to the right consistency.
BREAD MACHINE METHOD:
To determine if the dough in a bread machine is the right consistency, open the bread machines lid after 5 to 10 minutes into the KNEAD cycle. By this time, the dough should be in a soft, tacky ball. If it is a firm ball, add liquid, 1/2 to 1 tablespoon at a time; if it is very soft and still sticking to the sides of the pan, add flour, 1 tablespoon at a time.

What is "ripe" bread dough? How do I know if my bread dough is "ripe"?
"Ripe" bread dough is dough that has been allowed to rise for a sufficient length of time and is ready to be punched down.
To determine if yeast dough is "ripe" or has risen enough, push two fingers into the dough up to the second knuckle and remove them. If the holes remain, it is ripe and ready to punch down. If not, cover and let rise longer.
To determine if a risen loaf is ready for the oven, lightly touch side of loaf; if the imprint remains, it is ready to be baked. Expect a beautiful oven spring!
