Chicken Spinach and Garlic Pizza
Oven 400ºF


Step One
Fresh spinach leaves 1/2 oz
Crushed garlic 1/2 tsp
Olive oil 1 tsp
Wash and thoroughly dry spinach; chop into strips approximately 1/4- x 1-inch. Place in covered container with crushed garlic and olive oil. Mix thoroughly; refrigerate 1 hour.
Step Two
Water (120º to 130ºF) 2/3 cup
Olive oil 1 Tbsp
Salt 1/2 tsp
Bread flour 1 1/2 cups
SAF Gourmet Perfect Rise Yeast 1 tsp
Combine 3/4 cup bread flour, salt and yeast. Add water and olive oil. Stir to make a smooth batter. Gradually add enough reamining flour to make a soft dough. Knead on lightly floured surface for 3-4 minutes. Let dough rest approximately 20 minutes.
Step Three
Pizza Alfredo Sauce 2 Tbsp
Pre-cooked chicken, cut in small pieces 2 oz
Mozzarella cheese, grated 4 oz
Step Four
Turn dough onto a lightly floured surface; punch down to remove air bubbles. With wet fingers, press into greased 12 or 14-inch pizza pan. Spread alfredo sauce over crust. Evenly distribute spinach garlic mixture and chicken; top with mozzarella cheese. Bake at 400ºF for 25-30 minutes until edge is crisp and light golden brown and cheese is melted. Serve immediately.
