Cinnamon Raisin Bread

Adding the cinnamon to the dough will make the loaf a bit smaller, but o-o-o-oh that wonderful cinnamon flavor - what a treat - especially when toasted for breakfast.
Makes one 2-lb. loaf

Ingredients

4 cups Bread Flour 
2/3 cup Raisins 
1 1/2 tsp. Salt 
2 Tbsp. Sugar 
2 large Eggs 
1/3 cup Vegetable Oil or Butter
3/4 cup + 1Tbsp. Water 
2 Tbsp. Cinnamon 
2 tsp. SAF® Perfect Rise Yeast 

 

Instructions

Place room temperature ingredients in bread pan in the order listed. Select Basic/White cycle, Medium crust. Raisins can be added with other ingredients or five minutes before end of second kneading. (Some bread machines have a beeping signal to add raisins.) Check dough consistency after 5 minutes of kneading, making adjustments if necessary. When cycle is complete, remove from pan; cool on rack.
